New Recipe No. 6 - Broccoli Bush Would Love

I admit it, the name of this recipe intrigued me.  And it also reminded me how much I always loved my grandmother's broccoli casserole.

We eat a lot of broccoli in our house.  We love fresh broccoli, but it's not something I always have on hand, so I thought it would be nice to have a go-to recipe I could used frozen broccoli in, and I must say - this one's a winner!  I think it would be great to take to a family/church gathering as I believe it's a crowd pleaser.  It was for my crowd, anyway!

Now, it calls for a cracker topping - something I'm not fond of, something I've probably never even cooked myself.  But it was good.  Really good!  And I bet George W. Bush would like it!

BROCCOLI BUSH WOULD LOVE

(From:  Charging Through The Kitchen Cav Style)

2 boxes frozen chopped broccoli
1 can cream of mushroom soup
1 cup sharp cheddar cheese, grated
2 tbsp minced onion
2 eggs, well beaten
1 cup mayonnaise
salt and pepper to taste
1/2 cup butter, melted
butter crackers (like Ritz)

Cook broccoli for about 5 minutes and drain.  Mix eggs, soup, cheese, mayonnaise, onion, and broccoli.  Add salt and pepper to taste.  Put into greased casserole dish and crumble crackers over top and dot with butter.  Bake at 350 degrees until bubbly and lightly browned, approximately 25 to 30 minutes.

What I Learned:
  • Cracker topping is not as bad as I thought.
  • This is now one of my favorite recipes.
